Curried Squash and Apple Soup

3 C veggie broth
1 Tbs vegetable oil 

1/2 chopped onion
4 C cubed butternut squash
3 diced apples 
1/2 C chopped celery
3 tsp curry powder
1 tsp ginger

Heat oil, saute onion till soft. Add squash and remaining ingredients. Cover and simmer till squash is tender. Puree in blender or food processor.

Kale and Potato Soup

I’ve been missing soup weather.  I’m not quite sure we are there yet but this would also work well in a crockpot without generating too much heat. 


10 oz bag kale
3 potatoes
1 chopped onion
1 Tbs olive oil
1 Tbs minced garlic
5 C veggie stock

Saute onion and garlic in the olive oil until onion is clear and soft
Add 2 cups water and the potatoes
Simmer until potatoes start to soften
Steam kale seperately
When potatoes are well done, puree half with the remaining water
Combine all ingredients

Crockpot Eggplant Stew

A crock-pot/slow cooker is a great tool for a busy cook.  Invest as little as 15 minutes into completing this recipe right before bed. 

2 large chopped tomatoes

5 chopped carrots

1 peeled and cubed eggplant

1 can drained garbanzo beans

1 can drained red kidney beans

1 cup chopped onion

3 stalks chopped celery

3 cloves minced garlic

3 cups vegetable broth

1 can tomato paste

1/2 tsp oregano

1/2 tsp basil

1/4 tsp salt

1/4 tsp pepper

1 tsp crushed red pepper

1 bay leaf
Combine all ingredients. Cook overnight.

Garbanzo Bean Soup

Garbanzos are a personal favorite.  This soup is really filling. 

1 chopped garlic clove

3 cups veggie broth

1 can peeled and diced tomatoes

1 tsp olive oil

2 cans garbanzo beans

1/2 chopped onion

1 tsp rosemary

salt and pepper to taste

Heat olive oil over medium heat, add onion, sauté along with the garlic and rosemary. Add tomatoes, cook 10 minutes. Add broth and beans – simmer 5 minutes. Puree soup in blender or food processor.

Greens and Ginger Soup

Olive Oil
Sweet Potato
2 bunches of Green (Kale, Spinach, Chard)
Chopped Ginger
Veggie Bouillon
Lemon Juice

Chop the onion and cook in a bit of olive oil and salt.

Bring 4-6 cups of water to boil
Add bouillon and sweet potato
Wash greens – chop and add along with ginger
Simmer covered until the veggies are tender.
Add the onions, lemon juice, and salt to taste.

Sweet Potato and Spicy Carrot Soup

4 tbs olive oil

1 chopped onion
4 diced sweet potatoes
1 lb diced carrots
4 cups veggie stock
1 tsp chili oil

Heat oil
Cook onion till soft
Add sweet potato and carrots
Cook till soft
Pour in stock
Add enough water to cover
Bring to boil
Add chili oil
Blend smooth in blender or food processor
